Hello everyone! Welcome to the Engine 2 Diet blog!
As you know, the Engine 2 Diet was published in late Feburary, and ever since then life has been an amazing whirlwind. The book was featured on both The Today Show and the CBS Sunday Morning News Show (that program also mentioned my Dad’s book, Prevent and Reverse Heart Disease), and on dozens of radio interviews across the country. Plus, we got wonderful coverage in Newsweek, The Wall Street Journal, Women’s World, Best Life, Bottom Line Health, Austin Fit, The Austin American Statesman and many other great publications. And, I can’t tell you how many wonderful bloggers have taken on the Engine 2 Challenge and written about it on line. I am so grateful to all!
Also wonderful have been all the emails I’ve been getting from people all over the country about their experience with the Engine 2 Diet. They’ve been sharing their great medical stories, their weight loss, and their excellent recipes. And that’s one of the major reasons for this blog–I want you to be able to hear their stories, and cook their meals as well!
For example, here’s Tracy Miller’s story from Big Sandy, Texas:
At the end of 2008 I found myself the heaviest I had ever been. I had just turned 40 and the scales were saying 270. I was 100 pounds overweight. My cholesterol was sneaking up to the 200 mark and my doctor told me that if I couldn’t get the numbers down with diet and exercise, medication was the only option. I was already on meds for my high blood pressure and I really didn’t want to add anymore.
So, like a lot of people do, I made a new years resolution to lose weight. I thought that if I would just eat less of the bad foods I was already eating I could lose weight. By the end of January I had lost 10 pounds and was feeling confident. But by the end of February it was back again. Sometime in March I saw an article in The Dallas Morning News about you and your book. I had always been interested in the vegan lifestyle but never thought I could live with the diet. Your diet looked interesting. It was something different and that was just what I needed. I bought your book and started the E2 diet on March 23rd. I really wasn’t that hard at all. I was finding all kinds of new food and new ways to cook them. I even stared growing some of my own food. I am never hungry. I eat until I am full. But, I am now eating good plant based foods.
As of today, April 28th, I have lost 35 pounds. I am losing a pound or more each week. I am starting to exercise daily, which I haven’t done in years. I am feeling great. Oh and by the way, I just got my lab results back from my doctor visit last week. My cholesterol has dropped 48 points and my triglycerides dropped 66 points. My doctor says to “keep doing what you are doing because you have finally found what works for you”.
And, here’s a “vegetarian chopped liver” from Beth Soloman from Austin, Texas:
I’ve been having lots of fun trying your recipes and playing around with the concepts on my own. I wanted to share one that I was reminded of and adapted, and that we like a lot. It’s for “Vegetarian Chopped Liver.” The whole idea of chopped liver is disgusting, I know, but it’s a staple in Jewish cuisine, and has turned up in vegetarian forms in restaurants on the East Coast for a long time. Here’s a really easy, Engine 2-friendly version, that we like and is nearly goof-proof:
Saute a chopped onion in a non-stick pan, sprayed with a little bit of oil, until golden brown. Put that into a food processor with one can drained string beans, one can drained green peas, 1 to 1-1/2 cups toasted cashews, lemon juice to taste, and a little ground black pepper. Whirl until smooth. A yummy dip/sandwich filler.

Hey, I forgot to mention something incredibly wonderful — the birth of my second child, a daughter, Sophia Jean Esselstyn, born April 21st at 12:13 PM. She eats, she sleeps, she poops, and Jill and I love every moment of it.
